A shoe that feels soft in the shop is not the same as a shoe that is comfortable at six in the evening. What matters over a long day is being held without pressure points: no heel slip, no compression across the widest part of the foot, about a thumb's width at the toe. Very soft, unstructured shoes often feel best in the first hour and worst by the end.
If you will be on your feet all day, fit in the afternoon. Feet spread and swell across a day, and a morning fitting is often half a size optimistic about how a shoe will feel by evening.
